A Chinese food blogger has gone viral for doing something that sounds impossible: making fried chicken you can see through. Cai Nan, known for unconventional cooking experiments rooted in molecular gastronomy, uploaded a video last month titled "I want to make the fried chicken transparent, but the result is strange," and it has racked up nearly a million views on YouTube alone. The process involved rebuilding the chicken from scratch. For the bones, he mixed bone marrow, collagen, and cold gel in chicken-shaped molds.
For the meat, he liquefied actual chicken and then rebuilt the muscle fiber structure using a technique called spherification. The pieces were then fused together in a mold, and somehow, he even recreated the crispy outer shell of conventional fried chicken. The end result looks more like a glass sculpture than a meal. Of course, whether anyone would actually want to eat it is another question entirely.
