Florida Man Beating Prices By Eating Iguana Eggs

In Marco Island, Florida, John Johnson, has found a unique way to address the invasive green iguana problem…by turning their eggs into breakfast dishes. Green iguanas, native to Central and South America, have become pests in South Florida over the years, causing damage to seawalls, landscaping, and pool structures. Johnson, who specializes in removing these reptiles in his business “Down Goes Iguana,” decided to utilize the harvested eggs in his cooking.

He prepares the iguana eggs just like chicken eggs, mixing the yolks with milk, salt, pepper, and Latin-inspired spices like fajita seasoning and garlic. He then adds diced ham, peppers, and onions to create a flavorful scramble. Johnson notes that the taste is comparable to regular eggs, stating, "If I put this in front of you and didn't tell you what it was, you'd have no clue." As the old saying goes, if life gives you lemons, make iguana omelets.
