A surgeon in the UK has shared a surprising tip on TikTok that he says makes white bread healthier. Dr. Karan Raj claims when you freeze, thaw or toast the carby goodness, it actually lowers its Glycemic Index (GI) and minimizes blood sugar spikes. “If you take a slice of white bread and then freeze it, and then defrost it and toast it again, you could lower the Glycemic Index of the bread by almost double,” Raj claims.
The doc’s hack, outlined in a now-viral video, has sparked loads of questions about its potential benefits for those with diabetes, as well as questions about similar strategies for pasta and rice. The New York Times also supports the idea, noting that cooling cooked pasta or rice overnight can convert starches into resistant starches, offering health benefits like lower blood sugar and improved gut health.
